Pelmeni

A couple days ago I made home-made pelmeni. It took me like 2 hours!! There's plenty of them at the local Russian food store, but there's a special ingredient they don't put in them: love. My husband can always tell if I haven't put any Love in my cooking, so I made sure to put LOTS of it!!
Dough:
  • 2 sticks of butter melted
  • 2 cups warm milk
  • a pinch of salt
  • 1 egg
  • 5 cups flour
I mix the wet ingredients into dry ingredients, and work the dough with hand for about 5 min. or until the dough has no lumps. You will need to keep this dough warm since it dries up really fast, put it in a bowl over a pot of warm water and cover with plastic wrap. Now, this will make you lots of dough, I haven't tried freezing it, instead I use all of it at once for pelmeni then freeze them.
Meat:
  • 2 pounds of ground meat (i used beef)
  • 2 large onions pureed
  • 2 tsp. pepper
  • salt to taste
  • 1 tbsp fresh dill
  • 1 tsp. ground corriander
  • 1 or 2 chicken bullion cubes 
  • 1 egg
You can add any other ingredients to your taste just make sure the meat has lots of flavor because you will need to make up for the dough which has no flavor. Mix all of the ingredients well.
Step 1: roll a thin layer of dough onto a pelmeni maker (i got this one in Ukraine, ebay has some nice prices too, search for pelmeni maker)
Step 2: add meat onto each pelmeni hole

 Step 3: cover with another layer of thin dough
Step4: roll over with dough roller for the 2 layers to stick together
step5: take the pelmeni out and freeze them with flour so they wont stick together
step5: cook pelmeni in salted boiling water for about 5 min, check when the meat is cooked ans Enjoy!
Oh yeah, this sauce that you see is simply sauteed onions with garlic and carrots, then I added whipping cream with butter and fresh dill.

  1. Wow that looks good. Pelmeni are pretty much the best food in the world. Too bad they take so long to make; even with a mold! But always worth it!
